Selection of Grain
Only buy cleaned grain. Unclean grain can contain small stones that can damage the milling stones.
Spices - the full Aroma
The Mockmill easily mills dry spices such as pepper, coriander, cardamom and cinnamon, among others. Note that some spices, such as cinnamon, need to be broken into smaller pieces before milling so that they fit well in the Mockmill. After milling spices, you should mill a small amount of grain (e.g. wheat or brown rice) to cleanse the mill of the flavour of the spices. You can use this ‘cleaning flour’ if you want to give your baked goods or sauces a special flavour.
Only mill dry Grain
Moist grain causes the mill to stick. You can recognise dry grain by the fact that the grain cracks vigorously when you crush it with a spoon on a hard surface. Moist grain can be crushed and then looks like an oat flake. Rye should be stored for at least six months after harvesting.
Never mill Nuts or oily seeds
Never mill nuts or oily seeds such as sesame, linseed, poppy seeds or coffee beans. When milling oily foods, the milling stones can stick together and no longer grip.
